Easy Paleo Chili

Easy paleo chili that is whole30 compliant and paleo friendly. Top with fresh cilantro and avocado for the perfect weeknight dinner.

Ingredients

  • 1 onion small, diced
  • 2 carrots chopped
  • 4 cloves garlic chopped
  • 1 red bell pepper chopped
  • 1 sweet potato cubed
  • 1 pound ground beef extra lean
  • 1/2 pound ground pork
  • 2 28 oz cans crushed tomatoes fire roasted
  • 1 tsp oregano
  • 1 tbsp cumin
  • 1/2 tbsp chili powder
  • 1-2 tbsp sea salt

Instructions

  • With the slow cooker set to saute, brown the ground beef and pork. Season with salt and pepper to taste. If you don't have a slow cooker with this function, use a pan on the stovetop.
  • Once the meat is browned, add the onion and cook for another 3-5 minutes. Then add the bell pepper, garlic, carrot and sweet potato. Season with oregano, cumin and chili powder.
  • Add the cans of crushed tomatoes. I love to get the fire roasted versions as they add more flavor to the chili.
  • Season with salt and pepper and cook on low for 6 hours.
  • Once the chili is done, serve in individual bowls topped with fresh cilantro and avocado.
